Ingredients
- 1 can (15 oz) canned chickpeas, rinsed and drained
- 1 can (15 oz) canned black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 3 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Rinse and drain the chickpeas and black beans under cold water.
- Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and chop the parsley.
- In a large bowl, combine chickpeas, black beans, tomatoes, cucumber, onion, and parsley.
