Ingredients
- 6 cups cabbage (roughly 1/2 head)
- 1 carrot (cut into matchsticks)
- 1 can mandarin oranges (drained)
- 4 cups romaine lettuce (chopped)
- 1 red bell pepper (sliced thin)
- 1/2 cup rice apple vinegar (plain; if using seasoned, omit honey & salt)
- 3 tablespoons sesame oil
- 2 tablespoons raw honey (or sub date syrup)
- 1 teaspoon sea salt
- 1–2 teaspoons sriracha (or other chili sauce)
- 1/4 cup almonds (toasted)
- 2 tablespoons sesame seeds (toasted)
Instructions
- In a mixing bowl, combine cabbage, carrots, and mandarin oranges.
- In a jar with a lid, mix dressing ingredients and shake until well combined.
- Pour ½ to ¾ of the dressing over the vegetable mixture and refrigerate until ready to serve.
- Store romaine and bell peppers separately until serving to maintain their crunch.
- Toast almonds and sesame seeds in a frying pan over medium heat until lightly browned.
- Just before serving, combine romaine and bell peppers with the cabbage mixture; top with toasted nuts and seeds.
- Serve with additional dressing on the side if desired.
