- ½ cup butter (room temperature)
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon apple pie spice
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ cup melted butter (for coating)
- ½ cup granulated sugar (for topping)

Instructions
- Reduce apple cider in a saucepan over medium heat until halved; cool.
- Preheat oven to 350°F and grease a 9×5 loaf pan.
- In a mixing bowl, cream together butter and brown sugar until fluffy.
- Beat in egg and vanilla until well combined.
- Stir in dry ingredients along with reduced apple cider until just mixed.
- Pour batter into the prepared pan and bake for about 50 minutes, or until a toothpick comes out clean.
- Allow to cool for 15 minutes in the pan before transferring to a cooling rack.
- Brush with melted butter and sprinkle with cinnamon sugar.
