Ingredients

  • 3 cups green cabbage, shredded
  • 3 cups red cabbage, shredded
  • 2 large carrots, julienned
  • 3 cups bean sprouts
  • 3 green onions, finely sliced
  • 1/2 cup coriander leaves
  • 1/2 cup mint leaves
  • 3 tbsp rice vinegar
  • 3 tbsp soy sauce
  • 2 tsp fish sauce
  • 2 tbsp lime juice
  • 3 tbsp peanut oil
  • 1 1/2 tbsp sugar
  • 1/2 tsp birds eye or other red chilli, finely minced (optional)
  • 2 garlic cloves, minced
  • 3 cups shredded cooked chicken
  • 1/4 cup Asian Fried Shallots (optional)

Instructions

  1. Prepare the dressing by combining rice vinegar, soy sauce, fish sauce, lime juice, peanut oil, sugar, minced garlic, and optional red chili in a jar. Shake well until mixed.
  2. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, bean sprouts, green onions, coriander, and mint. Toss gently.
  3. Pour the dressing over the salad and toss until the vegetables are evenly coated.
  4. Garnish with optional Asian Fried Shallots before serving.
