  • 3 lbs chuck roast
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 2 yellow onions
  • 6 garlic cloves
  • 2 tsp cumin powder
  • 2 tsp oregano
  • Juice of 2 limes
  • 4 cups low-sodium beef broth

Instructions

  1. Prepare the chilies by removing stems and seeds, then soak them in hot water for 15 minutes until softened.
  2. In a blender, combine soaked chilies with garlic, onion, cumin, oregano, lime juice, and one cup of beef broth; blend until smooth.
