  • 2 cups cooked chicken, shredded or diced
  • 2 cups fresh broccoli florets
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper; spread them on a baking sheet.
  3. Roast the potatoes for 20–25 minutes until golden brown.
  4. While roasting, steam broccoli for about 4–5 minutes until tender.
  5. Heat shredded chicken in a saucepan with butter until warmed through.
  6. In a mixing bowl, combine sour cream, milk, garlic powder, onion powder, and half of the cheddar cheese.
  7. Layer roasted potatoes in a casserole dish, followed by chicken and broccoli.
  8. Pour the creamy mixture over the layers and top with remaining cheeses.
  9. Bake at 350°F (175°C) for another 20–25 minutes until bubbly.
  10. Let rest for 5 minutes before serving.
