  • 2 bunches asparagus

Instructions

  1. Char the corn over a gas burner for about 3 minutes until lightly charred. Let cool and slice off kernels.
  2. Blanch asparagus in boiling water for 1-2 minutes (optional), then transfer to an ice bath. Cut into 1-inch pieces.
  3. In a large bowl, combine corn, asparagus, sliced shallots, and scallions.
  4. Whisk together red wine vinegar, olive oil, honey, salt, and pepper in a small bowl until emulsified.
