Ingredients

  • 2 lb beef chuck roast (cut into chunks)
  • 7 dried ancho chilies
  • 5 dried guajillo chilies
  • 4 dried chilies de arbol
  • 1 onion (peeled and halved)
  • 6 garlic cloves
  • 4 tomatoes (on the vine)
  • 4 cups beef stock
  • Corn tortillas
  • Oaxaca cheese (for topping)
  • Cilantro and lime (for garnish)

Instructions

  1. Soak dried chilies in hot water for 20 minutes until softened.
  2. In a Dutch oven, heat grapeseed oil over medium-high heat. Sear beef until browned on all sides and remove from pot.
  3. Blend soaked chilies with onion, garlic, tomatoes, black peppercorns, cinnamon stick, and some beef stock until smooth.
  4. Return the beef to the pot and pour in the blended sauce along with remaining beef stock. Stir well.
  5. Cover and simmer on low heat for about 180 minutes until meat is fork-tender.
  6. Shred the beef using two forks. Warm corn tortillas on a skillet; fill each with shredded birria meat and top with Oaxaca cheese.
  7. Serve tacos with consume for dipping and garnish with cilantro and lime wedges.
