  • 3 cups Ore-Ida Shredded Hash Brown Potatoes (thawed & drained)
  • 4 tablespoons butter (melted)
  • 3 roma tomatoes (sliced lengthwise)
  • 1/2 cup fresh spinach leaves (roughly chopped)
  • 810 fresh basil leaves
  • 7 large eggs
  • 1/2 cup half & half
  • 1 cup finely shredded mozzarella cheese
  • Salt & pepper to season

Instructions

  1. Preheat oven to 450°F. Grease your pie dish.
  2. Press thawed hash browns between paper towels to remove moisture; toss with melted butter and shape into a crust in the pie dish.
  3. Bake for 20-25 minutes until golden brown; lower oven temperature to 350°F.
  4. Layer tomato slices around the crust, followed by spinach and basil.
  5. In a mixing bowl, combine eggs, half & half, mozzarella, salt, and pepper. Pour over the layered vegetables.
  6. Bake for an additional 30-40 minutes until set and golden.
