Ingredients
- 3 cups Ore-Ida Shredded Hash Brown Potatoes (thawed & drained)
- 4 tablespoons butter (melted)
- 3 roma tomatoes (sliced lengthwise)
- 1/2 cup fresh spinach leaves (roughly chopped)
- 8 – 10 fresh basil leaves
- 7 large eggs
- 1/2 cup half & half
- 1 cup finely shredded mozzarella cheese
- Salt & pepper to season
Instructions
- Preheat oven to 450°F. Grease your pie dish.
- Press thawed hash browns between paper towels to remove moisture; toss with melted butter and shape into a crust in the pie dish.
- Bake for 20-25 minutes until golden brown; lower oven temperature to 350°F.
- Layer tomato slices around the crust, followed by spinach and basil.
- In a mixing bowl, combine eggs, half & half, mozzarella, salt, and pepper. Pour over the layered vegetables.
- Bake for an additional 30-40 minutes until set and golden.
