  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup European-style unsalted butter (browned)
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk
  • 1/2 cup canned pumpkin (blotted)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon maple extract (optional)
  • 1/2 cup granulated sugar
  • 1/2 teaspoon pumpkin or chai spice blend

Instructions

  1. Make the brown butter by melting it in a saucepan over medium heat until golden brown, then cool.
  2. Blot canned pumpkin to remove excess moisture.
  3. Whisk together flour, spice blend, baking soda, and salt in one bowl; in another bowl mix cooled brown butter, brown sugar, maple syrup, egg yolk, and pumpkin.
  4. Combine the wet and dry ingredients without overmixing.
  5. Chill the dough for at least 8 hours or overnight.
  6. Preheat oven to 350°F (177°C), line baking sheets with parchment paper.
  7. Roll cookie dough into balls and coat in sugar/spice mixture.
  8. Bake for 12–14 minutes until slightly puffed; cool on sheets before transferring to a rack.
