Instructions
- Make the brown butter by melting it in a saucepan over medium heat until golden brown, then cool.
- Blot canned pumpkin to remove excess moisture.
- Whisk together flour, spice blend, baking soda, and salt in one bowl; in another bowl mix cooled brown butter, brown sugar, maple syrup, egg yolk, and pumpkin.
- Combine the wet and dry ingredients without overmixing.
- Chill the dough for at least 8 hours or overnight.
- Preheat oven to 350°F (177°C), line baking sheets with parchment paper.
- Roll cookie dough into balls and coat in sugar/spice mixture.
- Bake for 12–14 minutes until slightly puffed; cool on sheets before transferring to a rack.
