Ingredients
- 2 cups cooked chicken breast, shredded
- 2 cups shredded Mexican blend cheese, divided
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 8 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with aluminum foil and spray with cooking spray.
- In a mixing bowl, combine shredded chicken, 1 cup cheese, diced peppers and onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
- Lay out four tortillas on the baking sheet slightly overlapping. Spread the chicken mixture evenly over them and top with remaining cheese. Cover with the other four tortillas.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5-10 minutes until golden brown.
- Let cool for a few minutes before slicing into squares.
