  • 2 cups cooked chicken breast, shredded
  • 2 cups shredded Mexican blend cheese, divided
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 8 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with aluminum foil and spray with cooking spray.
  2. In a mixing bowl, combine shredded chicken, 1 cup cheese, diced peppers and onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  3. Lay out four tortillas on the baking sheet slightly overlapping. Spread the chicken mixture evenly over them and top with remaining cheese. Cover with the other four tortillas.
  4. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5-10 minutes until golden brown.
  5. Let cool for a few minutes before slicing into squares.
