  • 150 g granulated sugar
  • 1/4 tsp kosher salt
  • 1/2 tsp vanilla bean paste or extract
  • 113 g dark chocolate (finely chopped)
  • 1/2 tsp neutral oil

Instructions

  1. Preheat your oven to 90°C (200°F).
  2. Line two baking sheets with parchment paper.
  3. In a mixing bowl, beat egg whites, sugar, and salt on high speed until stiff peaks form (8–10 minutes).
  4. Gently fold in vanilla.
  5. Transfer meringue to a piping bag and pipe small rounds onto baking sheets.
  6. Bake for about 120 minutes until crisp and dry but not browned.
  7. Turn off the oven and leave meringues to cool inside.
  8. Melt chocolate with neutral oil in short intervals until smooth.
  9. Dip cooled meringues halfway into melted chocolate; let excess drip off.
