  • 18 graham crackers
  • 32 oz cream cheese
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup light brown sugar
  • 1/2 cup caramel sauce
  • Ground cinnamon, nutmeg, and vanilla extract

Instructions

  1. Preheat your oven to 300°F and wrap the outside of a 9-inch springform pan with foil.
  2. Prepare the crust by combining crushed graham crackers, melted butter, and cinnamon. Press mixture into the bottom of the pan.
  3. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, vanilla, cornstarch, salt, sour cream, and eggs; mix until just combined.
  4. In a separate bowl, mix brown sugar with cinnamon and nutmeg for the swirl.
  5. Pour half of the cheesecake batter over the crust. Sprinkle cinnamon swirl mixture on top, followed by remaining batter.
  6. Bake in a water bath for about 60-70 minutes or until set.
  7. Allow cooling gradually before chilling in the refrigerator overnight.
  8. Top with cream cheese frosting and caramel sauce before serving.
