  • 4 large ears of fresh corn (shucked)
  • 1 cup halved grape tomatoes
  • 1 cup diced English cucumber
  • 1/3 cup diced red onion
  • 2/3 cup crumbled feta cheese
  • Fresh parsley and basil (to taste)
  • 1/4 cup olive oil
  • 1 1/2 Tbsp red apple vinegar
  • 1 Tbsp lemon juice
  • 1 1/2 tsp honey
  • 1/2 tsp minced garlic
  • 1/2 tsp each salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together olive oil, red apple vinegar, lemon juice, honey, minced garlic, salt, and pepper. Refrigerate while preparing the salad.
  2. Boil water in a large pot. Add corn and cook for 2-3 minutes until tender-crisp. Transfer immediately to ice water to cool.
  3. Cut kernels from the corn and place them in a large bowl. Add grape tomatoes, cucumber, red onion, feta cheese, parsley, and basil.
  4. Pour the chilled dressing over the salad and toss well to combine. Adjust seasoning if needed.
