Ingredients
- 4 large ears of fresh corn (shucked)
- 1 cup halved grape tomatoes
- 1 cup diced English cucumber
- 1/3 cup diced red onion
- 2/3 cup crumbled feta cheese
- Fresh parsley and basil (to taste)
- 1/4 cup olive oil
- 1 1/2 Tbsp red apple vinegar
- 1 Tbsp lemon juice
- 1 1/2 tsp honey
- 1/2 tsp minced garlic
- 1/2 tsp each salt and freshly ground black pepper
Instructions
- In a mixing bowl, whisk together olive oil, red apple vinegar, lemon juice, honey, minced garlic, salt, and pepper. Refrigerate while preparing the salad.
- Boil water in a large pot. Add corn and cook for 2-3 minutes until tender-crisp. Transfer immediately to ice water to cool.
- Cut kernels from the corn and place them in a large bowl. Add grape tomatoes, cucumber, red onion, feta cheese, parsley, and basil.
- Pour the chilled dressing over the salad and toss well to combine. Adjust seasoning if needed.
