  • 1 cup uncooked wild rice
  • 8 ounces baby bella mushrooms
  • 4 cloves garlic
  • 2 medium carrots
  • 2 ribs celery
  • 1 large sweet potato
  • 1 small white onion
  • 1 bay leaf
  • 1 1/2 tablespoon Old Bay seasoning
  • fine sea salt and freshly-cracked black pepper
  • 1 (14-ounce) can unsweetened coconut milk
  • 2 large handfuls of kale

Instructions

  1. Prepare your ingredients by chopping vegetables into even pieces.
  2. In a large pot, heat oil over medium heat. Sauté onion, garlic, carrots, and celery until softened (about 5 minutes).
  3. Add uncooked wild rice and vegetable stock along with a bay leaf and Old Bay seasoning; mix well.
  4. Bring to a boil then reduce heat to low; cover and let simmer for about 30 minutes.
  5. Stir in sweet potato, mushrooms, and kale followed by coconut milk; simmer for an additional 15 minutes until vegetables are tender.
