Ingredients
- 6 cups vegetable stock
- 1 cup uncooked wild rice
- 8 ounces baby bella mushrooms
- 4 cloves garlic
- 2 medium carrots
- 2 ribs celery
- 1 large sweet potato
- 1 small white onion
- 1 bay leaf
- 1 1/2 tablespoon Old Bay seasoning
- fine sea salt and freshly-cracked black pepper
- 1 (14-ounce) can unsweetened coconut milk
- 2 large handfuls of kale
Instructions
- Prepare your ingredients by chopping vegetables into even pieces.
- In a large pot, heat oil over medium heat. Sauté onion, garlic, carrots, and celery until softened (about 5 minutes).
- Add uncooked wild rice and vegetable stock along with a bay leaf and Old Bay seasoning; mix well.
- Bring to a boil then reduce heat to low; cover and let simmer for about 30 minutes.
- Stir in sweet potato, mushrooms, and kale followed by coconut milk; simmer for an additional 15 minutes until vegetables are tender.
