  • 1 ½ lb shrimp (peeled and deveined)
  • 4 Tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ¾ cup heavy cream
  • 3 cups cooked jasmine or basmati rice
  • Fresh parsley (finely chopped)
  • Fresh dill (optional)
  • Olive oil
  • Lemon juice
  • Salt
  • Black pepper

Instructions

  1. In a bowl, mix cooked rice with parsley, dill, salt, and olive oil; fluff with a fork.
  2. Melt 2 Tbsp butter with olive oil in a skillet over medium heat; sauté minced garlic for 30 seconds.
  3. Season shrimp with salt and pepper; add to the skillet in a single layer. Cook for about 2 minutes per side until opaque.
  4. Remove shrimp; lower heat and melt remaining butter in the skillet. Stir in heavy cream, scraping up browned bits; simmer until slightly thickened.
  5. Return shrimp to the skillet; coat with the sauce and stir in remaining herbs and lemon juice.
  6. Serve over herb rice in bowls, garnished with extra herbs and lemon wedges.
