  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 12 oz penne pasta
  • 1 cup whole-milk ricotta cheese
  • 2 cups baby spinach
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 6-8 minutes per side until golden brown and cooked through. Remove and slice.
  2. In boiling salted water, cook penne pasta according to package instructions until al dente; reserve 1 cup of pasta water before draining.
  3. Sauté minced garlic in the same skillet for about one minute until fragrant.
  4. Stir in heavy cream and ricotta cheese on low heat until creamy. Gradually mix in Parmesan cheese until melted.
  5. Add sliced chicken and spinach; toss until spinach wilts. Combine with pasta, adding reserved water as needed to reach desired consistency.
  6. Serve topped with extra Parmesan cheese.
