- 1 cup whole-milk ricotta cheese
- 2 cups baby spinach
- 3 garlic cloves, minced
- 1 cup heavy cream

- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 6-8 minutes per side until golden brown and cooked through. Remove and slice.
- In boiling salted water, cook penne pasta according to package instructions until al dente; reserve 1 cup of pasta water before draining.
- Sauté minced garlic in the same skillet for about one minute until fragrant.
- Stir in heavy cream and ricotta cheese on low heat until creamy. Gradually mix in Parmesan cheese until melted.
- Add sliced chicken and spinach; toss until spinach wilts. Combine with pasta, adding reserved water as needed to reach desired consistency.
