- 18 oz fresh grape or cherry tomatoes
- 2 medium shallots
- 10 cloves garlic
- 3 tbsp extra virgin olive oil
- 18 oz potato gnocchi (vegan)
- 5 tbsp coconut cream
- Fresh basil leaves
- Lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the vegetables: remove tomato stems, peel garlic and shallots, and grate ginger.
- In a cast iron skillet, combine tomatoes, shallots, garlic, seasonings, and olive oil; mix well.
- Roast in the oven for about 35 minutes until the tomatoes burst.
- Boil salted water and cook gnocchi until they float (about 2-3 minutes). Drain.
- Combine roasted mixture with cooked gnocchi, coconut cream, lemon juice, and basil in the skillet; mix gently.
