  • 3 cups chicken broth
  • 14 ounces coconut milk from a can
  • 2 teaspoons fish sauce
  • 2 teaspoons sugar
  • 1 pound frozen dumplings (such as potstickers or wontons)
  • 1 cup spinach, chopped
  • 2 green onions, sliced
  • 1 tablespoon cilantro leaves, chopped
  • 1 lime

Instructions

  1. Heat oil in a large pot over medium heat and sauté diced onion until translucent. Add garlic, ginger, and optional lemongrass; cook until fragrant.
  2. Stir in Thai red curry paste and allow it to cook for about 2 minutes.
  3. Gradually mix in chicken broth and coconut milk; bring to a gentle simmer.
  4. Add fish sauce and sugar; taste and adjust seasoning if needed. Simmer for 5 minutes.
