  • 1 cup cherry tomatoes, halved

  • 1/3 cup Kalamata olives, pitted and sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Cook the couscous: Bring 1.5 cups of water to a boil in a medium saucepan. Add couscous and a pinch of salt. Cover and simmer on low heat for about 10 minutes until tender. Remove from heat and let sit covered for another few minutes.
  2. Prepare the vegetables: While the couscous cooks, chop cherry tomatoes in half, dice cucumber into small pieces, finely chop red onion, and slice Kalamata olives.
  3. Combine ingredients: In a large mixing bowl, fluff the cooked couscous with a fork. Add all chopped vegetables along with crumbled feta cheese.
  4. Make dressing: Whisk together olive oil and freshly squeezed lemon juice in a small bowl; season with salt and pepper.
  5. Toss everything together: Pour dressing over the salad mixture and toss gently until evenly coated.
