  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. In a pot, combine lentils with three cups of water and bring to a boil. Reduce heat and simmer for 20-25 minutes until tender but firm.
  2. While lentils cook, chop cucumber, cherry tomatoes, and red onion. In a large bowl, mix these vegetables with crumbled feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Once lentils are cooked and slightly cooled, drain excess water and add them to the vegetable mixture. Pour the dressing over everything and toss gently.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
