Ingredients

  • 1 whole raw chicken
  • 3 cloves minced garlic
  • 1 large onion
  • 5 chopped carrots
  • 3 chopped celery stalks
  • 1 quart low-sodium chicken broth
  • 4 cups water
  • 2 teaspoons dried basil
  • 2 teaspoons dried thyme
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Instructions

  1. In a large stock pot, place the whole chicken and pour in the chicken broth and water until it covers the chicken.
  2. Chop the onion, celery, and carrots into small pieces and add them to the pot along with minced garlic and seasonings. Stir well.
  3. Cover the pot and bring to a boil over medium-high heat. Once boiling, reduce heat to medium and simmer for one hour.
  4. Lower the heat to low and simmer for an additional hour. Remove the chicken once cooked, shred it into bite-sized pieces, and return it to the soup.
  5. Serve hot, garnished with fresh parsley if desired.
