Ingredients
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese

- 1 egg, beaten
- 1 cup long-grain rice
- 2 cups chicken broth
- Zest and juice of 1 lemon

Instructions
- In a large bowl, mix ground turkey, breadcrumbs, Parmesan, parsley, garlic, oregano, salt, pepper, and beaten egg until combined. Shape into meatballs about 1 inch in size.
- Heat olive oil in a skillet over medium heat. Cook meatballs for 10–12 minutes until browned and fully cooked. Remove from skillet.
- In a saucepan, heat olive oil and toast rice for about 2–3 minutes. Add chicken broth, lemon zest, and juice; bring to boil. Reduce heat and simmer covered for 15–20 minutes until liquid is absorbed.
- Fluff rice with a fork; stir in chopped dill and season to taste. Serve rice topped with meatballs.
