Ingredients
- 5 lbs green tomatoes
- 4 cups chopped onions
- 6 jalapeño peppers (seeded and chopped)
- 1 cup bottled lime juice
- 7 cloves garlic (minced)
- 1 cup chopped cilantro
- 2 tsp ground cumin
- 2 tsp dried oregano
- 3 tbsp sugar
- 2 tsp ground pepper
- 1½ tbsp pickling & canning salt
Instructions
- Blend green tomatoes until desired consistency is reached.
- Sterilize canning jars in simmering water.
- Combine blended tomatoes with lime juice, onions, jalapeños in a pot over medium heat.
- Stir in seasonings: cumin, oregano, garlic, cilantro.
- Add pickling salt, sugar, and pepper; simmer for 10 minutes.
- Fill sterilized jars with hot salsa, leaving ½ inch headspace.
- Seal jars with warm lids and process in boiling water for 20 minutes.
- Allow jars to cool before checking seals.
