  • 4 boneless skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 (15-ounce) can pineapple slices (including juice)
  • 2 teaspoons soy sauce
  • 1 teaspoon minced garlic
  • 1 red bell pepper, cut into cubes
  • 2 medium zucchinis, sliced
  • Green onions (for garnish)

Instructions

  1. Preheat your grill to medium heat.
  2. Cut four large sheets of heavy-duty foil. Place each chicken breast in the center of a sheet.
  3. Top each chicken breast with an equal portion of vegetables and 2-3 pineapple slices.
  4. In a mixing bowl, whisk together BBQ sauce, pineapple juice, soy sauce, and garlic; drizzle about 2 tablespoons over each chicken breast. Reserve 1/4 cup of the sauce for later.
  5. Fold the foil around the chicken and veggies to create sealed packets.
  6. Grill the packets for 13-15 minutes, flipping halfway through.
  7. Once cooked, carefully open each packet, baste with reserved sauce, garnish with green onions, and serve.
