Ingredients
- 1 ½ cups plain nonfat Greek yogurt
- Juice of ½ lemon
- 1 ½ teaspoons smoked paprika (divided)
- 2 ¼ pounds boneless skinless chicken thighs (cut into 1-inch pieces)
- ¼ red onion (cut into 1-inch pieces)
- 1 red bell pepper (cut into 1-inch pieces)
- Olive oil
- Kosher salt
- Garlic powder
- Ground pepper
Instructions
- In a mixing bowl, combine Greek yogurt, lemon juice, 1 ¼ teaspoons smoked paprika, rosemary, salt, and garlic powder. Add chicken pieces and coat well. Marinate in the fridge for at least one hour.
- Toss onion rings and bell pepper with olive oil, remaining salt, and ground pepper in another bowl.
- Preheat grill to medium-high heat. If using wooden skewers, soak them for at least thirty minutes.
