  • Juice of ½ lemon
  • 1 ½ teaspoons smoked paprika (divided)
  • 2 ¼ pounds boneless skinless chicken thighs (cut into 1-inch pieces)
  • ¼ red onion (cut into 1-inch pieces)
  • 1 red bell pepper (cut into 1-inch pieces)
  • Olive oil
  • Kosher salt
  • Garlic powder
  • Ground pepper

Instructions

  1. In a mixing bowl, combine Greek yogurt, lemon juice, 1 ¼ teaspoons smoked paprika, rosemary, salt, and garlic powder. Add chicken pieces and coat well. Marinate in the fridge for at least one hour.
  2. Toss onion rings and bell pepper with olive oil, remaining salt, and ground pepper in another bowl.
  3. Preheat grill to medium-high heat. If using wooden skewers, soak them for at least thirty minutes.
  4. Thread marinated chicken and vegetables onto skewers. Sprinkle with remaining smoked paprika and salt.
  5. Grill skewers for about 12-15 minutes, turning halfway through until chicken is fully cooked.
