  • 1/4 cup tahini
  • 1 1/2 pounds boneless skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 2 tablespoons chopped flat leaf parsley
  • 1 tablespoon chopped fresh dill
  • 3 tablespoons water
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon grated garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup white or brown rice
  • 1 1/2 cups water (2 cups if using brown rice)
  • 1 tablespoon chopped fresh dill (for rice)
  • 1 teaspoon lemon zest (for rice)
  • Salt to taste (for rice)
  • 1 tablespoon fresh lemon juice (for rice)

Instructions

  1. In a glass measuring cup, whisk together tahini, olive oil, parsley, dill, water, lemon juice and zest, garlic, cumin, smoked paprika, salt, and pepper.
  2. Add chicken to a freezer bag and pour in the marinade; seal and massage the bag to ensure even coating. Marinate for 1–4 hours.
  3. Preheat grill to medium-high heat (400–425°F). Clean and oil the grates.
  4. Grill marinated chicken for about 4–6 minutes per side until the internal temperature reaches 165°F. Allow to rest for 5–10 minutes before serving.
