- 1–2 cloves garlic, minced
- 1/2 cup chopped fresh herbs (parsley, cilantro, mint)
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- Wash and dry the cucumbers. Dice into bite-sized pieces and place them in a large mixing bowl.
- Add chickpeas, red onion, feta cheese, garlic, and fresh herbs to the bowl.
- In a separate bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and black pepper.
