  • 2 medium English cucumbers (about 4 cups)
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 cup small diced or crumbled feta cheese
  • 1/2 small red onion, thinly sliced
  • 12 cloves garlic, minced
  • 1/2 cup chopped fresh herbs (parsley, cilantro, mint)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Juice of 1/2 lemon
  • Salt and black pepper to taste

Instructions

  1. Wash and dry the cucumbers. Dice into bite-sized pieces and place them in a large mixing bowl.
  2. Add chickpeas, red onion, feta cheese, garlic, and fresh herbs to the bowl.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and black pepper.
