  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually add to the wet mixture until dough forms.
  5. Shape the dough into small ovals (about 1 inch) and press with a fork to create a crosshatch pattern. Sprinkle tops with extra sugar.
  6. Bake for 8–10 minutes or until lightly golden; let cool completely on a wire rack.
  7. For the filling, beat together creamy peanut butter and softened butter, then mix in powdered sugar and vanilla extract. Adjust consistency with milk if needed.
  8. Once cooled, spread the filling on half of the cookies and top with another cookie.
