Ingredients

- 1 tablespoon soy sauce
- 1/4 cup cooking sake (or rice vinegar)
- 1/2 tablespoon sesame oil
- 3 dashes black pepper powder
- 2 inches ginger (peeled and coarsely diced)
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- White sesame seeds and scallion for garnish
Instructions
- Clean and dry chicken wings.
- In a mixing bowl, combine marinade ingredients: soy sauce, cooking sake (or vinegar), sesame oil, black pepper, and ginger. Add wings and marinate for at least 30 minutes.
- For the glaze, heat honey, soy sauce, mirin, and cooking sake (or vinegar) in a saucepan until thickened.
- Preheat oven to 400°F (207°C). Place marinated wings on a baking sheet and bake for 10 minutes; brush with glaze.
- Bake for an additional 10 minutes; repeat glazing process. Bake until golden brown (10 to 12 additional minutes).
