  • 1 tablespoon soy sauce
  • 1/4 cup cooking sake (or rice vinegar)
  • 1/2 tablespoon sesame oil
  • 3 dashes black pepper powder
  • 2 inches ginger (peeled and coarsely diced)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • White sesame seeds and scallion for garnish

Instructions

  1. Clean and dry chicken wings.
  2. In a mixing bowl, combine marinade ingredients: soy sauce, cooking sake (or vinegar), sesame oil, black pepper, and ginger. Add wings and marinate for at least 30 minutes.
  3. For the glaze, heat honey, soy sauce, mirin, and cooking sake (or vinegar) in a saucepan until thickened.
  4. Preheat oven to 400°F (207°C). Place marinated wings on a baking sheet and bake for 10 minutes; brush with glaze.
  5. Bake for an additional 10 minutes; repeat glazing process. Bake until golden brown (10 to 12 additional minutes).
  6. Garnish with sesame seeds and scallions before serving.
