Ingredients
Scale
- 4–6 bone-in chicken thighs (about 1.5 lbs)
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tbsp Dijon mustard
- 2 tbsp fresh thyme or parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Season chicken thighs with salt and pepper on both sides.
- In a skillet over medium-high heat, add olive oil and sear chicken thighs skin-side down for 5-7 minutes until golden brown. Flip over and sear the other side briefly.
- Reduce heat to medium; add minced garlic to the skillet and sauté for about one minute until fragrant. Stir in heavy cream, chicken broth, Dijon mustard, and fresh herbs. Allow the sauce to simmer gently.
- Transfer seared chicken to the baking dish and pour the creamy sauce over them. Bake uncovered for 25-30 minutes or until chicken reaches an internal temperature of at least 165°F (74°C).
- Let rest for a few minutes before serving; drizzle extra sauce on top.
