Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Season chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
- Add sliced eggplant to the skillet and cook until tender (about 5 minutes). Layer cooked eggplant on top of the chicken.
