Description

  • 4 boneless, skinless chicken breasts
  • 1 medium eggplant, sliced thinly
  • 4 oz prosciutto
  • 8 oz fresh mozzarella cheese, sliced
  • 2 tbsp extra virgin olive oil
  • 1 cup good-quality tomato sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
  3. Add sliced eggplant to the skillet and cook until tender (about 5 minutes). Layer cooked eggplant on top of the chicken.
  4. Top each chicken breast with prosciutto slices followed by mozzarella cheese.
  5. Pour tomato sauce evenly over the layered ingredients.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
