Ingredients

  • 4 skinless salmon fillets (about 6 oz each)
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper (any color), chopped
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a bowl, combine zucchini, cherry tomatoes, and bell pepper. Drizzle with olive oil and toss in minced garlic, salt, and pepper. Spread evenly in the baking dish.
  3. Pat dry salmon fillets, season with salt, pepper, and lemon juice. Place on top of the vegetables.
  4. Bake for 20-25 minutes or until salmon flakes easily with a fork and reaches an internal temperature of at least 145°F (63°C).
  5. Serve hot with roasted vegetables.
