- 1 medium zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 bell pepper (any color), chopped
- 3 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- In a bowl, combine zucchini, cherry tomatoes, and bell pepper. Drizzle with olive oil and toss in minced garlic, salt, and pepper. Spread evenly in the baking dish.
