  • 1/2 cup unsalted butter (room temperature)
  • 3 large eggs (room temperature)
  • 2 tsp pure vanilla extract
  • 1 cup heavy cream (high-fat content)
  • 2 cups fresh strawberries (sliced)

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. 2. In a bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix melted butter with eggs and vanilla until blended. Gradually combine wet ingredients with dry ingredients until just mixed.
  3. 3. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  4. 4. Whip heavy cream until soft peaks form; gradually add sugar until stiff peaks develop.
  5. 5. Once cooled, layer one cake on a serving plate and top with half of the whipped cream and sliced strawberries. Repeat with the second layer.
