Ingredients

  • 5 tablespoons salted butter (melted)
  • 1 cup almond flour
  • 8 ounces cream cheese (softened)
  • 3 large eggs
  • 1/3 cup lemon juice
  • 1/3 cup confectioners sweetener
  • 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line an 8×8 pan with aluminum foil.
  3. For the crust, combine melted butter, almond flour, and sweetener in a bowl. Press into the pan and pre-bake for 7 minutes.
  4. In a mixer, blend cream cheese, egg yolk, sweetener, vanilla extract, lemon juice, and zest until smooth. Spread over cooled crust.

  6. Bake for 20–25 minutes until set; cool completely before slicing.
