  • 2 medium kohlrabi
  • 4 tablespoons all-purpose flour
  • 2 eggs
  • 6 tablespoons cream
  • 8 tablespoons Panko breadcrumbs
  • 200g sour cream
  • Fresh herbs (to taste)
  • 1 clove garlic (pressed)
  • Salt, pepper, and rapeseed oil for frying

Instructions

  1. Prepare the herb dip by mixing sour cream with cream, fresh herbs, and pressed garlic. Season with salt, pepper, and lemon juice. Chill until serving.
  2. Wash, peel, and slice kohlrabi into 1 cm thick rounds. Boil in salted water for about 4 minutes until tender but firm. Drain and cool.
  3. Set up a breading station: Combine flour, beaten eggs mixed with cream, and Panko breadcrumbs.
  4. Dredge each kohlrabi slice in flour first, then dip in egg mixture, and finally coat with Panko.
  5. Heat oil in a pan and fry the coated kohlrabi slices until golden brown on both sides. Drain excess oil on paper towels before serving.
