Ingredients
- 1 medium head of cauliflower, cut into small florets
- 1 ½ cups cherry tomatoes, halved
- ½ cup red onion, thinly sliced
- ⅓ cup black olives (Kalamata)
- ⅓ cup green olives
- ¼ cup fresh parsley, chopped
- ¼ cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional)
Instructions
- Blanch cauliflower florets in boiling water for 1-2 minutes until tender-crisp. Transfer immediately to an ice bath to stop cooking.
- In a large mixing bowl, combine blanched cauliflower with cherry tomatoes, red onions, olives, and parsley.
- In a small bowl, whisk together olive oil, vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and optional red pepper flakes.
- Pour the dressing over the salad and toss well to coat. Refrigerate for at least 30 minutes before serving.
