- 1 can (15 oz) white cannellini beans (drained & rinsed)
- 2 mini cucumbers (chopped)
- 1/2 red bell pepper (chopped)
- 10 oz little tomatoes (halved)
- 1/3 cup Kalamata olives (pitted & chopped)
- 1/2 cup crumbled feta cheese
- 1 tablespoon olive oil
- 1 tablespoon red apple cider vinegar
- Fresh parsley, oregano, salt & pepper to taste
Instructions
- In a large mixing bowl, combine the drained cannellini beans, chopped cucumbers, red bell pepper, halved tomatoes, Kalamata olives, and crumbled feta cheese.
