Ingredients

  • 1 lb Brussels sprouts (trimmed and halved)
  • 2 tbsp olive oil
  • ½ cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • ¼ cup cotija cheese (crumbled)
  • Fresh cilantro (chopped)
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • Salt & pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper. Spread them on a baking sheet.
  2. Roast for 30–35 minutes until crispy and golden, stirring halfway.
  3. In a bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, garlic powder, and salt to create the crema.
  4. Once the Brussels sprouts are roasted, transfer them to a platter and drizzle with crema. Top with cotija cheese and cilantro before serving with lime wedges.
