- 1 lb Brussels sprouts (trimmed and halved)
- 2 tbsp olive oil
- ½ cup sour cream
- 2 tbsp mayonnaise
- 1 tbsp lime juice
- ¼ cup cotija cheese (crumbled)
- Fresh cilantro (chopped)
- ½ tsp smoked paprika
- ½ tsp chili powder
- ½ tsp garlic powder
- Salt & pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper. Spread them on a baking sheet.
- Roast for 30–35 minutes until crispy and golden, stirring halfway.
- In a bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, garlic powder, and salt to create the crema.
- Once the Brussels sprouts are roasted, transfer them to a platter and drizzle with crema. Top with cotija cheese and cilantro before serving with lime wedges.
