Ingredients
- 2 cups fresh-squeezed Meyer lemon juice
- 2 cups water
- 1 package SureJell pectin
- 4 1/2 cups sugar
Instructions
- In a large heavy-bottom pan, combine Meyer lemon juice, water, and SureJell pectin. Stir until well mixed.
- Bring the mixture to a rolling boil over medium-high heat and boil for 1 minute without stirring.
- Add sugar to the mixture and stir continuously until fully dissolved.
- Return to a rolling boil and let it boil again for 1 minute.
- Remove from heat and allow to cool slightly before ladling into sterilized jars with about 1/4" headspace.
- Wipe jar rims with a cloth, seal with lids, and process in a water bath canner for 8 minutes.
