- 8 oz canned bamboo shoots

- 1 ¼ cups chicken stock
- 2 tablespoons soy sauce
Instructions
- In a large bowl, coat chicken with cornstarch, salt, and white pepper. Add oil and toss again.
- Heat oil in a wok or skillet over medium-high heat. Cook the chicken for about 30 seconds per side; remove from pan.
- Stir-fry carrots, snow peas, and mushrooms for about 3 minutes until softened.
- Add water chestnuts, bamboo shoots, and garlic; sauté for another minute.
- Return chicken to the pan, add chicken stock, soy sauce, sugar, and sesame oil. Bring to a boil for 1-2 minutes.
