Ingredients
- 2 skinless, boneless chicken breasts (220g each)
- 7 oz mushrooms (200g), sliced
- 3 oz mozzarella cheese (80g), sliced
- 2 cups fresh baby spinach
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- In a skillet over medium heat, melt butter and sauté mushrooms for about 5 minutes until softened. Add minced garlic and cook for another minute before stirring in spinach until wilted.
