  • 1 plum, sliced

  • 1 ½ tablespoons coconut sugar (or brown sugar)
  • 1 large egg (for egg wash)
  • Optional: almond meal, sliced almonds

Instructions

  1. Make the dough by combining flour and salt in a food processor. Add butter until crumbly. Gradually add ice-cold water until the dough forms. Shape into a disk, wrap, and refrigerate for at least an hour.
  2. Prepare the filling by mixing peaches, plums, blueberries, and coconut sugar in a bowl.
  3. Preheat your oven to 375°F (190°C).
  4. Roll out the chilled dough into a large circle on a floured surface and transfer to parchment paper on a baking sheet.
  5. If using almond meal, sprinkle it over the center of the dough. Arrange the fruit mixture within the border.
  6. Fold the edges of the dough over the fruit and brush with egg wash; sprinkle with sliced almonds.
  7. Bake for 50–55 minutes until golden brown.
