  • 1 medium fresh pineapple, peeled and diced
  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 tsp ground ginger

Instructions

  1. Prepare the pineapple by peeling, coring, and dicing it into small chunks.
  2. In a medium saucepan, combine sugar, vinegar, red pepper flakes, and ground ginger. Stir until well mixed and bring to a gentle boil over medium heat.
  3. Once boiling, add the pineapple chunks and reduce heat to low. Let simmer for about 10 minutes, stirring occasionally.
  4. Remove from heat and let cool for about 30 minutes. Optionally stir in fresh mint leaves.
  5. Transfer the mixture with the syrup into sterilized jars, seal tightly, and refrigerate for at least 24 hours before serving.
