  • 1 cup English cucumber (about 150g), sliced
  • ½ cup feta cheese (about 75g), crumbled
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until tender.
  2. Allow the beets to cool slightly before peeling off the skins. Chop into bite-sized pieces.
  3. Slice cucumber into thin rounds or half-moons.
  4. In a large bowl, combine roasted beets, cucumber slices, and crumbled feta.
