  • 1 cup heavy whipping cream
  • Zest of 2 lemons
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup granulated sugar (for blueberries)
  • 2 cups fresh blueberries
  • 1/2 cup lemon curd (store-bought or homemade)
  • 9 graham cracker sheets (or ladyfingers)

Instructions

  1. Grease an 8×8-inch baking dish with nonstick spray.
  2. In a bowl, mix mascarpone cheese, lemon zest, and lemon juice until smooth. Fold in heavy whipping cream until blended.
  3. Gently toss blueberries with granulated sugar in another bowl.
  4. Spread half of the mascarpone mixture at the bottom of the dish. Layer half of the blueberry mixture on top, followed by half of the lemon curd. Repeat layers.
  5. Cover with plastic wrap and refrigerate for at least four hours or overnight.
  6. Slice into squares and serve cold, garnished with extra blueberries if desired.
