Ingredients
- 1 small zucchini (sliced)
- 1 small yellow squash (sliced)
- 1 pint grape tomatoes
- 1 green bell pepper (chopped)
- 1/2 small red onion (chopped)
- 1 1/2 cups fresh corn
- 1 1/4 lbs large raw shrimp (peeled and deveined)
- 3 tbsp olive oil
- Garlic, salt, pepper, paprika, celery seed, thyme, cayenne pepper
Instructions
- Preheat your grill to medium-high heat (425°F).
- Cut eight sheets of heavy-duty aluminum foil (12×14 inches each).
- In a mixing bowl, combine zucchini, yellow squash, tomatoes, bell pepper, onion, corn, shrimp, olive oil, garlic, and spices; toss well.
- Layer two sheets of foil per packet and place the mixture in the center.
- Seal the packets tightly by folding the edges over several times.
- Grill for about 12-14 minutes until the shrimp are cooked through.
- Carefully open the packets and serve with optional parsley and lemon wedges.
