Ingredients

  • 1 small zucchini (sliced)
  • 1 small yellow squash (sliced)
  • 1 pint grape tomatoes
  • 1 green bell pepper (chopped)
  • 1/2 small red onion (chopped)
  • 1 1/2 cups fresh corn
  • 1 1/4 lbs large raw shrimp (peeled and deveined)
  • 3 tbsp olive oil
  • Garlic, salt, pepper, paprika, celery seed, thyme, cayenne pepper

Instructions

  1. Preheat your grill to medium-high heat (425°F).
  2. Cut eight sheets of heavy-duty aluminum foil (12×14 inches each).
  3. In a mixing bowl, combine zucchini, yellow squash, tomatoes, bell pepper, onion, corn, shrimp, olive oil, garlic, and spices; toss well.
  4. Layer two sheets of foil per packet and place the mixture in the center.
  5. Seal the packets tightly by folding the edges over several times.
  6. Grill for about 12-14 minutes until the shrimp are cooked through.
  7. Carefully open the packets and serve with optional parsley and lemon wedges.
