  • 2 cups uncooked rice
  • 3 large chicken breasts
  • 2 small heads of broccoli, chopped
  • ½ cup soy sauce
  • ½ cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons sriracha
  • Sesame seeds for garnish
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • ¼ cup rice vinegar
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder slurry (2 tsp arrowroot + 2 tbsp water)
  • ½ cup mayonnaise

Instructions

  1. Rinse rice under cold water until clear; cook in a saucepan with 4 cups of water for about 18 minutes.
  2. In a mixing bowl, combine olive oil, salt, pepper, chili powder, smoked paprika, onion powder, oregano and chicken pieces; coat well.
  3. Preheat air fryer to 375°F (190°C) and cook marinated chicken for 15-20 minutes until cooked through.
  4. Whisk together sauce ingredients; toss cooked chicken in the sauce and air fry for an additional 5 minutes until thickened.
  5. Serve chicken over rice topped with steamed broccoli, spicy mayo, and sesame seeds.
