- 2 cups uncooked rice
- 3 large chicken breasts
- 2 small heads of broccoli, chopped
- ½ cup soy sauce
- ½ cup honey
- 3 cloves garlic, minced
- 2 tablespoons sriracha
- Sesame seeds for garnish
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp pepper
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp oregano
- ¼ cup rice vinegar
- 2 tsp sesame oil
- 1 tsp ground ginger
- 2 tsp arrowroot powder slurry (2 tsp arrowroot + 2 tbsp water)
- ½ cup mayonnaise
Instructions
- Rinse rice under cold water until clear; cook in a saucepan with 4 cups of water for about 18 minutes.
- In a mixing bowl, combine olive oil, salt, pepper, chili powder, smoked paprika, onion powder, oregano and chicken pieces; coat well.
- Preheat air fryer to 375°F (190°C) and cook marinated chicken for 15-20 minutes until cooked through.
- Whisk together sauce ingredients; toss cooked chicken in the sauce and air fry for an additional 5 minutes until thickened.
- Serve chicken over rice topped with steamed broccoli, spicy mayo, and sesame seeds.
