  • 23 ripe plantains
  • ½ pound ground meat (beef, pork, or lamb)
  • ½ medium onion (chopped)
  • 1 teaspoon minced garlic
  • ½ cup tomato sauce
  • 1 tablespoon smoked paprika
  • 1 small bell pepper (any color)
  • ½ cup grated cheese (optional)

Instructions

  1. Preheat oven to 400°F (205°C). Line baking sheets with foil and coat with cooking spray.
  2. Cut ends off the plantains and make a shallow slit along the seam. Peel back the skin gently.
  3. Place plantains on the baking sheet, spray lightly with cooking spray, and bake for 30 minutes or until golden brown.
  4. In a saucepan over medium heat, heat oil and sauté onions and garlic until soft. Stir in tomato sauce and smoked paprika; simmer for 10 minutes.
  5. Add ground meat to the saucepan and cook until fully browned (about 10 minutes).
  6. Mix in diced bell pepper; season with salt and pepper to taste.
  7. Make a horizontal slit in each baked plantain and stuff with filling. Top with cheese if desired.
  8. Return to the oven for an additional 5 minutes to melt cheese.
