Ingredients
- 2–3 ripe plantains
- ½ pound ground meat (beef, pork, or lamb)
- ½ medium onion (chopped)
- 1 teaspoon minced garlic
- ½ cup tomato sauce
- 1 tablespoon smoked paprika
- 1 small bell pepper (any color)
- ½ cup grated cheese (optional)
Instructions
- Preheat oven to 400°F (205°C). Line baking sheets with foil and coat with cooking spray.
- Cut ends off the plantains and make a shallow slit along the seam. Peel back the skin gently.
- Place plantains on the baking sheet, spray lightly with cooking spray, and bake for 30 minutes or until golden brown.
- In a saucepan over medium heat, heat oil and sauté onions and garlic until soft. Stir in tomato sauce and smoked paprika; simmer for 10 minutes.
- Add ground meat to the saucepan and cook until fully browned (about 10 minutes).
- Mix in diced bell pepper; season with salt and pepper to taste.
- Make a horizontal slit in each baked plantain and stuff with filling. Top with cheese if desired.
- Return to the oven for an additional 5 minutes to melt cheese.
