- 1 can (15 oz) pumpkin puree
- 1 large yellow onion, diced
- 2 garlic cloves, minced
- 6 tbsp olive oil

Instructions
- Preheat oven to 400°F (200°C).
- Rinse mini pumpkins, pat dry, cut off the tops, and scoop out seeds.
- Sauté onion and garlic in olive oil until fragrant.
- In a bowl, mix ground beef, pumpkin puree, sautéed onion and garlic, spices, salt, and herbs.
- Fill each pumpkin with the stuffing mixture.
- Place in a greased baking dish and roast for 30 to 35 minutes until tender.
